Homemade caviar

Hartvig K. Sverdrup made caviar the old-fashioned way, this is adapted to make at home without smoking.

2 kg scraped roe and 4 tablespoons salt - put in the fridge overnight.

The next day is added:

2-3 tablespoons smoke acid
2 tbsp salt
2 tablespoons sugar
Season with pepper
Add soybean oil as needed.

This can easily be made at home, good luck!
