The Grading of Round Lofoten Cod
(Excerpt from the Norwegian Trade Standard)
First and Second class: grades of this type of fish generally apply to the Italian market. For other markets, round Lofoten cod is sorted in the same way as Finnmark cod or any other round cod. First Class round Lofoten cod is sorted into the following grades:
Category and abbreviation Characteristics
Ragno
  • over 60 cm
  • the leanest fish
  • flawless, finest quality
Westre Magro - WM - 60/80 cm (thin Westre 60/80)
  • thin, lean category
  • no sign of fleshiness
  • must have right colour
Westre Magro - WM - 50/60 cm (thin Westre 50/60)
  • same quality as above, but shorter
Westre Magro - WM - 40/50
  • same quality as above, but shorter
Westre Demi Magro - WDM - 60/80 cm (semi-thin Westre 60/80)
  • same demands on quality as with the other First Class grades
  • thin fish
  • some fleshiness on one side is acceptable, along the neck and down to the anus, or some on both sides
Westre Demi Magro - WDM - 50/60 cm (semi-thin Westre 50/60)
  • as above, but smaller
Grand Premier - GP - 60/80
  • 40-45 pcs. per 50 kg
  • considered a special grade
  • must have right colour
  • can be classified as a slim Bremer
Lub
  • 40-45 pcs. per 50 kg
  • minor defects acceptable
Bremer - BR
  • 50-55 pcs. per 50 kg
  • well-rounded and robust fish
Hollender - HO
  • 58-63 stk per 50 kg
  • well-rounded type
Westre Courant - WC (ordinary Westre)
  • 75-80 pcs per 50 kg
  • well-rounded and robust
  • must have right colour
Westre Ancona WA
  • 75-78 pcs per 50 kg
  • Fish that would normally be classified as well-rounded Westre, but that cannot be accepted in that category
  • minor defects acceptable
Westre Piccolo - WP - (small Westre)
  • 00-120 pcs per 50 kg
  • must have right colour

Fish that are smaller than Westre Piccolo and Westre Magro 40/50, are sold as both Westre Piccolo Piccolo (number of pieces submitted) or as Lofoten 1/2 (100 - 200 grams per fish).
